Enzymes also react with tempreture but bid the ph the temperature cant be unsuitable to the enzyme other wise it will de nature or sluggish down the enzymes which would make it very difficult to obtain accurate and trusty results. A carbohydrase enzyme is different to a catalyse enzyme and other enzymes because enzymes have different patterns (shape). Enzymes are like keys to different substrates like e.g. fat, sugar and the substrates are like keyholes.
